Ingredients:2 lbs beef stew meat or sirloin tips2 tbsp olive oil (for browning)1 small onion, sliced3 cloves garlic, minced1 cup beef broth1/3 cup balsamic vinegar2 tbsp Worcestershire sauce1 tbsp soy sauce1 tbsp brown sugar1 tsp Dijon mustard (optional)1 tsp dried rosemary (or 1 tbsp fresh, chopped)1/2 tsp dried thymeSalt & pepper to taste2 tbsp cornstarch + 2 tbsp water (for thickening, optional)Instructions:Brown the Beef (optional but recommended):Heat olive oil in a skillet over medium-high heat. Sear the beef tips just until browned. Transfer to the slow cooker.Add Ingredients to Slow Cooker:Add sliced onions and minced garlic on top of the beef. In a bowl, whisk together the broth, balsamic vinegar, Worcestershire sauce, soy sauce, brown sugar, Dijon mustard, rosemary, thyme, salt, and pepper. Pour over the meat.Cook:Cover and cook on low for 6–8 hours or high for 3–4 hours, until the beef is fork-tender.Optional Thickening:In the last 30 minutes, mix cornstarch and water, stir into the sauce in the slow cooker, and cook until thickened.Serve:Spoon beef and sauce over mashed potatoes, egg noodles, or rice. Garnish with extra rosemary if you’d like.Note:For the best flavor, searing the beef before slow cooking adds a delicious depth—but if you’re short on time, you can skip it and still get great results. This dish pairs perfectly with mashed potatoes, but it’s also amazing over egg noodles or rice. Leftovers taste even better the next day!
