Double Chocolate Marshmallow Cookies
Ingredients:
1 cup all-purpose flour
1/3 cup cocoa powder
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1/2 cup unsalted butter, softened
1/2 cup of granulated sugar
1/2 cup packed brown sugar
1 large egg
1 teaspoon of vanilla extract
12 large marshmallows, half way
1/2 cup chocolate ganache, for topping

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
In a large bowl, beat the butter, granulated sugar and brown sugar until light and fluffy. Add the egg and vanilla extract, and mix until combined
Gradually add the dry ingredients to the wet ingredients, mixing until combined.
Gather the batter on the prepared baking sheet, about 2 tablespoons per cookie, separating them 2 inches.
Bake for 10-12 minutes, or until the edges are set.
Remove the cookies from the oven and immediately press half a marshmallow in the center of each cookie. Return to the oven and bake for an additional 2 minutes, or until the marshmallows are swollen.
Let biscuits cool on baking sheet for 5 minutes, then transfer to a wire rack to cool
Drizzle chilled cookies with chocolate ganache in a swirl pattern.
