Ultimate Mac ‘N’ Cheese-Stuffed Meatloaf

Ingredients:

  • 1¼ lb lean ground beef
  • 1 cup Italian breadcrumbs
  • 2 eggs
  • ½ cup diced onion
  • 2 tsp garlic powder
  • 2 tsp dried parsley
  • 1 tsp salt
  • 1 tsp black pepper
  • ½ cup honey BBQ sauce
  • 1 cup prepared macaroni & cheese
  • 1 cup shredded mozzarella

Topping:

  • ⅓ cup ketchup
  • 2 tbsp brown sugar
  • 1½ tbsp yellow mustard

Directions:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with foil.
  2. In a bowl, mix beef, breadcrumbs, eggs, onion, garlic powder, parsley, salt, pepper, and BBQ sauce.
  3. Shape mixture into a flat rectangle on the foil.
  4. Add mac and cheese and mozzarella down the center.
  5. Fold meat over filling and seal edges.
  6. Mix topping ingredients and spread over the loaf.
  7. Bake for 55–65 minutes or until cooked through.
  8. Let rest 5–10 minutes before slicing.
